Gaia's Garden by Toby Hemenway -- A very simple, concise and useful guide to permaculture principles and practices. A great starting place!
Permaculture a Designer's Manual by Bill Mollison -- Basically a college text book on permaculture. Very detailed stuff. Excellent but definitely advanced and sometimes overwhelming.
One Straw Revolution by Masanobu Fukuoka
Sowing Seeds in the Desert by Masanobu Fukuoka -- A different take on permaculture. Much more hands off and reliant on natural selection and systems.
Restoration Agriculture by Mark Shepard -- A great book for changing the face of modern agriculture, also a great book for permaculture in the USA.
Salad Bar Beef by Joel Salatin -- One of Joel's many books chronicling the systems at Polyface Farms in Virginia. This one is specifically about raising pastured beef cows.
Small-Scale Livestock Farming by Carol Ekarius
The Methods of Jean Pain by Ida and Jean Pain -- Discusses the methods of a French forester who did amazing work in central France without supplemental irrigation.
Sepp Holzer's Permaculture by Sepp Holzer
Geoff Lawton Online -- We took an online Permaculture Design Course from Geoff and it was fantastic.

Permaculture News -- A central location for designers, forums, resources, etc.
Oasis Design -- Excellent resource for greywater systems, handling and storing water, and sustainable/biodegradable soaps, etc.
Stark Bro's Nursery -- Cold hardy fruit and nut trees
Strictly Medicinal Seeds -- Unique seeds and plants
Sheffield's Seeds -- A wide variety of flower, tree, and bush seeds. Just about anything you could want.
Forest Agriculture Enterprises -- Cold tolerant fruit and nut trees.
Hardy Fruit Tree Nursery -- Cold hardy fruit trees and vines.
